(December 22, 2020 2:24 PM) With expanded options, local farm-to-table opportunities, and outstanding personal service, Jackson College is bringing catering and food service in-house. The new enterprise will be called Memorable Events, which is both a promise and a guarantee.
“We were nearing the end of our contract with (previous provider) Continental Services and wanted to have the ability to run our own food service. This allows us access to several different vendors, including some farm-to-table options,” said Senior Vice President Cindy Allen. Staying to lead the catering service is General Manager and Executive Chef Greg Klaus, now a college employee. Klaus has been in Jackson for about 15 months, and he has gained quite a reputation in the community and on campus for his culinary creations. The College is interviewing for a coordinator and, in the new year, will post positions for cooks and sous chefs, bringing on employees as more students and College employees return to campus. “We look forward to seeing what we can accomplish once we can be up and running full speed,” she said.
Klaus brings more than 20 years of experience in all aspects of dining and food service, including executive chef and dining director in private and corporate locations such as hotels, country clubs, retirement communities, restaurants, and corporate dining facilities in Illinois, Virginia, Georgia, Colorado, and now Michigan. With his leadership, Memorable Events will offer expanded higher-end catering cuisine and expertise. Klaus is also looking to add more options and locations for smaller parties, such as showers and birthdays.
“Designed by a classically trained chef, we will have menus that offer an expanded variety for breakfast, lunch, dinner and hors d’oeuvres,” Klaus said. “Our menus will focus on using as many locally sourced items as possible and allow us to accommodate a wider variety of events in a unique venue, as well as off-site options. Everything can be customized for a variety of budgets and preferences, while offering a broader culinary experience for students, employees and community members. We will have up-front pricing and included services, heavy on customer services and experiences.”
Jackson College typically hosts approximately 30 major events a year on campus, including external customers, weddings, anniversary parties, holiday parties and donor events. In addition, there are several catered lunches and dinners on campus each week. Summer brings different types of catered events, and in fall and winter, food services provide two meals a day to some 400 students who live in student housing.
